Sometimes it gets so difficult to find the right words to start the blog post. Like today… I keep staring at the monitor trying to get these words out of me. The watch keeps ticking and there appear inner anxiety. What if there is no point in what I am doing? Who else needs to read my words except for me? And then I look straight forward again and stubbornly keep on writing, making food photos, cooking, finding amazing recipes I want to share. I forget about the reason why I keep on doing it. I just do it. Because I love it. It is a part of me. The expression of me. Me.

There are still so many ideas I haven’t fulfilled for my blog yet. And I wish I will manage till the summer ends. I wish I had more time for my own plans. I guess, I still try to figure out what it is like to live the moment. Our time is such a treasure, such a fragile thing. And we waste it so easily…

The blog you happen to see now if you read it at all is still undone. After almost 2 years I still have so much to do to improve it. Vegetarian Pasta

Prep time 10 minutes
Cook time 27 minutes
Total time 37 minutes


  • 250g penne rigate
  • 2 red bell peppers
  • 2 yellow bell peppers
  • 2 onions
  • 2 cloves garlic
  • 2 bunches parsley
  • a few medium slice mozzarella
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • salt, pepper
  • 1 tablespoon capers
  • 1 red chilli pepper


1. Deseed bell peppers and chilli pepper. Cut red and yellow bell peppers into cubes. Cook them with olive oil at medium heat for 15 minutes.
2. Finely cut onions, garlic and deseeded chilli pepper, add them to bell peppers and cook everything at low heat for another 10 minutes. Salt and pepper. Add balsamic vinegar, mix everything and cook for a couple more minutes.
3. Cook penne rigate according to the instructions on a package. Mix together penne with the vegetable mixture, add capers, finely cut parsley, mix everything again. Cut mozarella into slices and put it on top of each serve.
