I love thick pancakes. Fluffy, slightly browned with juicy filling. Apple filling is just perfect. It can be a bit sour or delightfully sweet. I pour some maple syrup on top of this fluffy pile and melt it immediately in my mouth. Mmm… what a joy!

I would say the recipe of these thick pancakes is sort of the Russian cousin of the recipe of American dinner pancakes. Sour milk product is the base, then I add a little bit of flour, egg, baking powder and soda, a pinch of salt and some sugar or Stevia in my case. In the end it is hard to state where the original roots of thick pancakes recipe come from. But I’ve known it as long as I’ve known myself.

Should I mention how great it is to make thick pancakes with apple filling for a lazy breakfast on a weekend? When I have nowhere to hurry and spend some additional time in the kitchen, I usually indulge myself and A. with this kind of breakfast. I bet little children will love these thick pancakes with apple filling as well. They are not extremely sweet. And the sweetness you will experience comes only from the natural unprocessed ingredients. Which can be a good option for those of us who take care of health, nutrition and the level of sugar in body.

As I said it takes some time to make thick pancakes for breakfast. So, it might be problematic if you would like to enjoy them in the morning in the middle of the work week. But you can always devote sometime in the evening to make thick pancakes and save them for breakfast. Just heat them up a little bit in microwave and enjoy! Great mood in the beginning of the new day is absolutely guaranteed.

Thick Pancakes With Apple Filling

Serves 4
Prep time 10 minutes
Cook time 20 minutes

  • 400ml kefir
  • 1 Large egg
  • 1 cup flour (+ a little bit more if the consistency feels not right yet)
  • 1 tablespoon Stevia
  • 1 pinch salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2-3 Medium apples


1. Whisk egg with stevia, add kefir and a pinch of salt.
2. Add baking soda and baking powder to the mixture. Then add flour and stir up everything well. Make sure the batter is light, fluffy and it has quite half-thick consistency.
3. Peel off the apples and cut them into thin segment (30-50 mm).
4. Grease the frying pan, heat it up, pour tablespoon of batter on the surface. Add a piece of apple on top and press it smoothly with the spoon. As soon as one side of the pancake is nicely browned, flip it on the other side. When the pancake is ready, put it on the plate covered with the kitchen paper to get rid of the grease.
5. Sprinkle your pile of thick pancakes with powdered sugar and cinnamon (optional). Serve with sour cream, honey, maple syrup, fresh berries or jam. Choose your favorite option.


Tip: you may fry a few thick pancakes at once. Also you can use other filling than apples, e.g. blueberries or any berries, banana etc. Choose the best option for you.
