To tell the truth, I rarely bake cakes. First of all, it is a real high-calorie bomb in one little bite. Besides, it lies heavy on the stomach after trying some recipes. So, when I find a good easy-to-cook recipe with simple light ingredients, I just can’t resist.
I tried this Limoncello and Balsamic Strawberry, Victoria Sponge Teacake recipe thanks to two occasions: my husband’s birthday and the biggest desire to try out my latest purchase – the cookbook “What Katie Ate. Weekend Katie” by Katie Quinn Davies. Perhaps, I am too old-fashioned but I love books illustrated with the stunning photographs that I can physically hold in my hands. “What Katie Ate” truly amazed me how great it is designed. It is a real aesthetic pleasure to own it! The only thing that a little bit confused me is the contradiction between English version of the recipe and the Polish translation I used as I have the Polish edition of this cookbook. So, if you are going to recreate one of Katie’s recipes from her foreign editions, I advice you to make sure the translated recipe corresponds to the original one.

M-m-m-m… yummy! Especially that limoncello and balsamic strawberry filling! Real heaven! I believe the filling can also perfectly match any summery light dessert, for example, Panna Cotta!

Here is my new favourite cookbook so far…
For the cake I used: butter, eggs, milk (not seen on the picture),caster sugar, flour, baking powder and vanilla sugar (instead of vanilla essence)
For the yummy strawberry filling you’ll need: fresh strawberries, handful of mint leaves, lemon juice, caster sugar. balsamic acid, Limoncello…or in my case Grand Manier (and it proved out just well!)
