Hi, friends! I am finally back. And you know what? I am bringing with me the coolest recipe ever of Salad With Asparagus, Bacon And Poached Egg.
I can’t even believe how time flies. Last time I posted was in March and now it’s almost June. So much happened in between. I had a confusing accident with my laptop. Then I took some blogging online classes and it took all of my time. Then I started a new job at the office. The beginning was so exhausting that I could hardly do anything afterwards. And besides my German classes took the rest of my time. How will I survive till summer? Ok, too much complaints…
But what I am really happy about is that it is almost summer. It is time for fresh strawberries, cherries, watermelons, greens, tomatoes. It is almost the season of lemonade, iced tea and ice-cream without any excuse. The air smells amazingly nice filled with the mix of summer wild flowers and freshly cut grass. You’re awaked of the bird’s singing in the early morning. And before the dawn you can hear swallows restless twitter. It’s almost the time when you want to stay up late and wake up early in the morning not to miss the day. Summer days are such a treasure. It feels like you manage to live a little life through the summertime.
Here it would be nice to turn on Ella Fitzgerald’s “Summertime” in the background, close the eyes and enjoy a moment.
Coming back to the point of today’s post I need to confess. I have never eaten asparagus before. Before I decided to make two light almost summer salads for the blog. It may sound ridiculous to you. But I come from the region where asparagus is not grown and eaten at all. When I moved to Poland and began interested in food more, I found out about asparagus. Precisely how healthy and tasty this green guy is. Do you know that asparagus is rich in folic acid, calcium, fiber and vitamins A, B, C? Besides that it is low caloric and positively affects digestive system. All the amazing things are hidden in this beautiful asparagus, aren’t they?
Today’s recipe of salad with asparagus, bacon and poached egg was taken from my favorite source of inspiration glamour.ru. I somehow changed the dressing a little bit. I find apple cider vinegar is a healthier option than the raspberry vinegar full of artificial ingredients I found on the shelf of the supermarket. The salad on the whole feels very light for the stomach. But believe me it is enough to feed yourself and not get hungry soon after your meal.
Before I leave you with the recipe one on one, I wish you not to waste every single minute of your time in this beautiful time of the year, live every second twice slower than you are used to, take pictures of every day of your summer, eat more seasonal fruits and vegetables, enjoy ice-creams and other oh so summer food, take long walks, ride a bike and not worry about anything. Life is too short to waste it on silly anxiety.
