Blueberry Tartlets

I intended to make it a Friday recipe post last week but did not manage to finish it in time. And then I caught a cold. It’s the most unpleasant situation to get sick at the end of summer when the weather suddenly goes from extremely hot to nice and warm and it feels like the best time to spend the rest of August strolling around the city, eating ice-cream and having a good time. But no. Not in my case. And by the way, this blog is not turning into a food blog. Just under some circumstancies I have a few food photos prepared ahead.

As long as the blueberry season still goes on, I decided to share with you a very easy peasy recipe of blueberry tartlets. 100% healthy, yummy and no baking involved! The recipe is traditionally taken from some old issue of Glamour magazine (Russian edition).

Blueberry Tartlets

Serves4
Prep time15 minutes

Ingredients

  • 2 cups blueberries
  • 2 teaspoons freshly pressed orange juice
  • 1 teaspoon lemon juice
  • 1/2 teaspoon lemon zest
  • 1/4 teaspoon vanillin
  • 4 teaspoons brown sugar

for the tartlets

  • 2/3 cups grated almonds
  • 100g dates

Directions

1.Mix together blueberries, juices, lemon zest, vanillin and sugar, cover it and place it in the fridge.
2.Process dates in the kitchen processer adding a spoon of water. Add grated almonds to the dates. Mix them well together. Divide the dough into 4 balls. Make a tartlet shape out of every ball and put the tartlets into the fridge for 2 hours (it depends on your fridge).
3.Put the tartlets out of the fridge and fill the top with blueberries. Pour some juice from the blueberry mix on top. Decorate the top with some lemon (or orange as in my case) zest curls.
